Wate Distribution in Chicken Heart Muscle Studied by Proton , Deuterium and Oxygen-17 Nuclear Magnetic Resonance

|
The proton, deuterium, and oxygen-17 nuclear magnetic relaxation behavior of chicken heart muscle was investigated. The nonlinear regression analysis of proton relaxation data showed the presence of three transverse relaxation components that are likely corresponding to three types of water compartments in the heart muscle. A deuterium exchange study was undertaken to obtain additional information concerning chemical exchange of water protons/deuterium within these compartments and the effects of proton intermolecular dipolar interactions on proton transverse relaxation of water. The validity of three-component analysis in deuterium exchanged heart muscle as well as ground heart muscle was revealed. ©÷H and ^(17)O NMR results were comparable to the ©öH NMR relaxation results, showing at least two water compartments in chicken heart. The results are likely to expand the basic understanding of physicochemical and hydration behavior of muscle and meat.
